Goose Island’s newest Bourbon County collection reminds us that the most important ingredient was never the coffee, fruit or vanilla—it was always the oak.

Instead of merely asking what flavors can be added to Bourbon County, the six-beer lineup asks a different question:

What happens when the barrel becomes the recipe?

Tiramisu Cask Finish Stout marks one of Goose’s more intriguing experiments to date. After bourbon barrel aging, the beer spends time inside rum casks, layering sugarcane warmth beneath espresso, cocoa nibs and vanilla. Rather than overwhelming the stout, the rum finish behaves like the mascarpone in the dessert that inspired it—bringing richness without sacrificing balance.

Perhaps the lineup’s boldest statement comes not from a stout at all.

2026 Bourbon County Stout Triple Oak Barleywine

Triple Oak Barleywine ventures beyond familiar BCS territory by exploring how different species of oak influence a single beer. Finished in barrels previously holding Angel’s Envy Triple Oak Bourbon, the English-style barleywine absorbs characteristics from French, Chinkapin and Hungarian oak, each contributing distinct spice, sweetness and tannin. It is less about bourbon than botany—proof that even different trees tell different stories.

Toasted Barrel Rye Stout

The Toasted Barrel Rye Stout continues that conversation.

Built around Elijah Craig Toasted Rye barrels, the beer first captures rye whiskey’s peppery personality before moving into toasted oak barrels, where heat rather than char coaxes sweetness directly from the wood. Notes of crème brûlée, toasted hazelnut and vanilla emerge not because they were added, but because the barrel itself changed..

Collectively, the six releases feel less like independent beers than chapters in the same story.
